Is it possible to have more than one set of hours? For example, I would like to have the regular business hours and another set of hours for a specific purpose, like a class that happens regularly 2-3 days a week at a specific time, every week and this would be for every listing.

Yes, you can add a separate set of hours by adding a custom listing form field of the "Opening Hours" type via the admin panel. This will enable the same functionality as the existing hours feature on the listing management page, and the new set of hours will appear in the "Features" section of the "Listing" widget.
