I have a listing type I would like to add, "People", but when I click on Add Listing Type in the demo, it asks me for a Listing Type in the dropdown (Local Business, Classified, Event, etc). How would I, or can I, add a new listing type that's not on that list?

This setting for a listing type is only required for schema.org markup, allowing search engines to properly process your content. Since we do not currently provide markup for Person, please use Local Business as the closest alternative.

If you specifically need the https://schema.org/Person markup, please reach out to us via the ticket system, and we can discuss the possibility of implementing it.
